Made during a week of Budget Eats, this 3-ingredient no-bake banana "bread" surprised me with how low-effort it was. It will not compete with our chocolate-chip studded classic banana bread, but for something that does not require any heat, the results are pretty decent.

For the banana "bread"
ripe bananas
crushed cornflakes
For serving
smooth peanut butter
water
Sliced fresh mango (optional)
- In a large bowl, mash bananas with jam until smooth. Fold in crushed cornflakes until completely combined. Transfer to a loaf pan and cover with a plate. Let sit until cornflakes are completely softened, 3 to 4 hours.
- In a medium bowl, stir together peanut butter and water until smooth.
- Drizzle with peanut sauce and serve with fresh mango, if desired.
