Kemin's Neumentix nootropic ingredient may support neural tissues in the eyes, early study shows - Nutritional Outlook

Kemin Industries (Des Moines, IA) says a new study presented in April at the Association for Research in Vision and Ophthalmology annual meeting shows that the company’s Neumentix nootropic ingredient may also support the eyes’ neural tissue.

Kemin’s research partner on the study was the University of Pisa in Italy. At the conference, Rosario Amato, PhD, a postdoctoral research fellow from the University of Pisa, presented data gleaned from the study, which was conducted in a rat model of hypertensive glaucoma.

“Our findings emphasized the intraocular pressure–independent antioxidant and neuroprotective effects of Neumentix,” said Amato in a press release.

Massimo Dal Monte, the study’s principal investigator and a professor at the University of Pisa, added, “The research substantiates the role of oxidative stress and inflammation in driving neurodegeneration in retinal ganglion cells, but also demonstrates the potential to counteract these drivers with nutritional strategies.”

According to Kemin’s press release, “The study findings validated Neumentix’s expanded mechanisms of action that are effective for neural tissues beyond the brain. Results indicated the Neumentix, Kemin’s natural spearmint (Mentha spicata L.) extract, sourced from patented plants and characterized by its phenolic complex, works to counteract common degenerative pathways in the eyes and brain.”

Jennifer Garner is responsible for some of our favorite recipes. From her two-ingredient ice cream snack to her five-ingredient pasta dinner, the recipes we find on her “Pretend Cooking Show” almost always join our collection.

That’s why when Garner mentioned something called a “pizza cracker” in a recent “Women’s Health” interview, we knew we had to go back through the “Pretend Cooking Show” archives to find the recipe.

“For dinner, I make mom food,” she told “Women’s Health.” “If I’m cooking, it gonna be a roast chicken, it could be mashed potatoes, twice baked potatoes, it could be rice, it could be pizza cracker—where you just take pizza dough and you bake it and it bubbles up.”

After hearing the words “pizza cracker,” we took to her Instagram, where Garner posts all her cooking videos and information, and scrolled back a few years until we finally found a post showing us what this magical-sounding food actually is. Sure, she explained it as a baked pizza crust, but we weren’t sure if there were additional ingredients or toppings or if we could just throw some pizza dough in the oven and call it a day.

The post brought us back to 2018 when Garner shared her favorite pizza dough recipe and explained that “Years ago [she] rolled out extra dough, brushed it with olive oil, sprinkled it with crushed dry thyme, rosemary and a good dose of salt and [her] family’s favorite bread was born. The kids call it #pizzacracker and it is [her] family’s top request.”

It was a good thing we did our research because olive oil and herbs are key to making the pizza cracker taste delicious.

How To Make Jennifer Garner's Pizza Cracker

Admittedly, Garner’s pizza cracker is incredibly simple to make using your favorite pizza dough recipe—or Garner’s pizza dough recipe. But, I wanted something even simpler, so I opted to use store-bought pizza dough instead of making one from scratch. That way, the whole thing only took me about 10 minutes to make.

The good thing about this recipe is that, once you have your dough ready, you can basically eyeball everything. You can use as much or as little dough as you want and sprinkle as many herbs and seasonings on it as your heart desires.

The key to the pizza cracker is rolling out the dough incredibly thin so that it bubbles up while cooking—and also to keep an eye on it while it’s in the oven. I only baked it for 8 minutes and it got a little brown (as you can see), so I probably should have pulled it out after 6 minutes.

Garner has never really explained how she serves the pizza cracker—whether it’s just as-is, like a crispy pita chip, with a dipping sauce, or even with a plate of meat and cheeses. In the “Women’s Health” interview, it sounds like she serves it as the starch with her main course and salad—but again, whether it’s just eaten plain remains unknown.

While it's tasty on its own, I think it needs a little something more because it really is just like a cracker, and what’s a cracker if not a vessel for something else? I’d probably serve it with soup or a burrata salad—or really anything that you can dip it in. It’d even be delicious with just a bowl of warm pizza sauce for dipping so that it’s truly a pizza cracker.

However you decide to serve it, it really doesn’t get much easier than a hunk of store-bought pizza dough, olive oil, and herbs, so it’s definitely worth giving the recipe a try.

When I first heard about this cake I was intrigued. Would it be delicious or just delicious considering the minimal effort? Well the first time I tried it, it was pretty good but it had something missing. And when I made it again and added a few ingredients then the cake absolutely popped! While it was decent as a 3 ingredient cake, adding just a few spices and salt elevates it to delicious!

What is Biscoff? Biscoff is also known as Speculoos, a brand of Belgian cookies that originated in the early 20th century. The name "Biscoff" is a combination of the words "biscuit" and "coffee" because these cookies were traditionally served with coffee in Europe. Biscoff cookies are thin, crisp and caramelised rectangular shaped biscuits with a lovely spiced aroma from speculoos spices (cinnamon, nutmeg, cloves and ginger). The biscuits became hugely popular and since then they've brought out a Biscoff spread that has become phenomenally popular. This highly addictive spread is used much like peanut butter and is made using Biscoff cookies processed until smooth (or chunky).

Is this Biscoff Cake gluten free? While this recipe doesn't use flour, Biscoff is made up of blending up cookies so it already contains flour. Sorry for any GF eaters!

This Biscoff Cake was one of the many cakes that I brought to Mother's day lunch. Ever since I got the elevated cholesterol results I've cut out cakes for both of us and that means that there's always cake in the freezer or fridge waiting to be eaten or given away. This time I brought 5 cakes including one that Valentina brought me from Honey & Walnut.

This year Mr NQN's sister Araluen was hosting Mother's Day at her house. A few months ago she moved from an apartment in the Northern Beaches to a house the Inner West with her daughter Aura Lily and new fiancé Ben. She started looking after dogs as a way to earn a bit of extra money and absolutely loves it. This week she was looking after a little oodle called Wolfgang.

At a glance Wolfgang could be Teddy or his twin at least. When Tuulikki walked in she greeted Wolfgang with "Hello Teddy!". We brought Teddy and Milo over. Araluen said that Wolfgang was rather shy with other dogs and would take a while to settle but as soon as the three met they were instant friends (it's an oodle thing).

The mums in the family were supposed to have the day off cooking so it was up to the guys to make food (Mr NQN was off the hook as I'd already baked everything). Everyone enjoyed salads, bread, dips, salami and cheeses. We served the 5 cakes and an enormous fruit salad.

Then the kids got restless. There are three kids in the family: Aura Lily and her two younger cousins Jett and Finn who are Amaya and Laporello's sons. And when Aura and Jett get together it's like she has petrol and he has matches and they rev each other up so that they go crazy. They got dressed up and invited an adult of their choosing to the back room under the pretense that they wanted to show them something.

Then they "trapped" them in there. The first victims were Laporello and Arran (Ben's brother). The kids slipped another adult a note reading, "We have the bald guy (Laporello) and the karaoke guy (Arran holds karaoke nights). This is a ransom note. PTO" and on the other side the note read, "GIVE US MONEY".

They actually managed to get cold hard cash from people this way. They repeated it with almost all of the adults except for a few of us and then started on the dogs. I wondered if it was the start of a life of crime.

Finn, the lone voice of justice

However there was one lone voice that stopped them. Jett's younger brother Finn was indignant when it came to them kidnapping his mother and got very cross at his brother Jett. He also told him off indignantly shouting, "I like the dogs! Leave them alone and stop kidnapping them!" before pushing his abashed brother into the room and locking the door. So I think there's hope yet for the wannabe criminals and that may be in the form of a 5 year old justice crusader!

3 Ingredient (Plus Spices!) Biscoff Cake

An Original Recipe by Not Quite Nigella

Preparation time: 5 minutes

Cooking time: 45 minutes

  • 500g/1.1lbs smooth Biscoff spread
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla bean paste (optional)
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon fine salt (optional)
  • 3 eggs, beaten

For icing

  • 150g/5ozs Biscoff spread
  • 3 Biscoff cookies

Step 1 - Preheat oven to 160C/320F and line a 7 or 8 inch round springform tin with parchment. Remove all of the foil seal from the top of the Biscoff jar and microwave for 40-50 seconds or until liquid and pourable - the more liquid it is, the easier it will be to mix in. Pour the Biscoff spread into a large bowl and whisk in the baking powder, spices and salt with a large balloon whisk. Then whisk in the beaten eggs until you get a shiny, evenly textured batter (watch out for chunks of Biscoff).

Step 2 - Pour into the prepared tin and bake for 40 minutes for an 8 inch cake or 50 minutes for a 7 inch cake (or until the centre is no longer wobbly). Place on a cooling rack and cool completely. Then turn the cake upside down and place on a serving plate. Melt the 150g/5ozs of Biscoff in the microwave for 30 seconds and then pour it over the top of the cake. Use a knife or spoon to coax the icing to the edge to make drips.

Step 3 - Place one Lotus biscoff cookie in the centre and place the remaining two cookies in a ziplock bag and bash with a rolling pin. Sprinkle around the edge using a teaspoon.

Experts suggest wearing sunscreen all day long, especially during the sunny summer days. There is no question that excess sun exposure causes skin cancer.

But with so many brands and types of sunscreen to choose from, picking the right one can be overwhelming.

Dermatologist Dr. Steven Grekin, founder of the Grekin Skin Institute, says the the ingredients in sunscreen are the most important factors to consider when buying.

In 2021, a report identified benzene -- a chemical known to cause cancer -- in dozens of sunscreen and after-sun care products. Benzene is not an ingredient in sunscreen and its presence was a manufacturing issue, but experts say it’s still important to know what you’re buying and how to use it.

First, be sure to wear sunscreen every single day. Grekin recommends lotions over sprays.

“I think that spray-on sunscreens sell the convenience, but I really don’t think we’re very efficient at it,” Grekin said. “Anybody that’s ever tried to spray paint something knows that when we’re spraying with the can, we’re missing certain areas. The uniformity of coverage is not great. When you rub on a cream or a lotion, you absolutely see where it is, so you know you’re covering all of the areas.”

Grekin also recommends purchasing and using a sunscreen that has physical blocking agents in it.

“For me, it’s not about the brand, it’s about the ingredients,” Grekin said. “It’s zinc oxide and titanium dioxide, these are physical blocks.

“Chemical sunscreens try to absorb the rays and not allow them to get into your skin. I don’t want the rays even to penetrate. I don’t want any absorption, I want blockage. So I want titanium and zinc oxide,” he said.

Experts urge people to use a sunscreen with a 30 SPF or higher.

Also, be sure to check the expiration dates on your sunscreen. Don’t use sunscreen that has expired.

Grekin says to make sure you’re putting enough sunscreen on each time you apply it.

“Remember, to put [sunscreen] on a normal-sized human being, you need a shot glass full of sunscreen,” he said.

Sunscreen isn’t waterproof or sweat proof, and should be reapplied at least every two hours -- especially if you’re spending time in the water.

The good thing about this recipe is that, once you have your dough ready, you can basically eyeball everything. You can use as much or as little dough as you want and sprinkle as many herbs and seasonings on it as your heart desires.

The key to the pizza cracker is rolling out the dough incredibly thin so that it bubbles up while cooking—and also to keep an eye on it while it’s in the oven. I only baked it for 8 minutes and it got a little brown (as you can see), so I probably should have pulled it out after 6 minutes.

Garner has never really explained how she serves the pizza cracker—whether it’s just as-is, like a crispy pita chip, with a dipping sauce, or even with a plate of meat and cheeses. In the “Women’s Health” interview, it sounds like she serves it as the starch with her main course and salad—but again, whether it’s just eaten plain remains unknown.

While it's tasty on its own, I think it needs a little something more because it really is just like a cracker, and what’s a cracker if not a vessel for something else? I’d probably serve it with soup or a burrata salad—or really anything that you can dip it in. It’d even be delicious with just a bowl of warm pizza sauce for dipping so that it’s truly a pizza cracker.

However you decide to serve it, it really doesn’t get much easier than a hunk of store-bought pizza dough, olive oil, and herbs, so it’s definitely worth giving the recipe a try.
