Chef and creator of the recipe, Kate Shungu, suggests using "a regional beer such as Abita" which she says could make it taste extra authentic. The Beer Institute explains that cooking with beer helps to bring "out all the richness of the meat and vegetables." You also don't have to worry about getting tipsy from your dirty rice, as the alcohol evaporates while you're cooking. She says it's "flavorful and hearty" and is the perfect amount to be served as a main dish or could be used as a tasty side.
