Some industry professionals are more divergent in their methods. Julia Momose, owner of the Kumiko bar in Chicago, feels the Japanese highball is a delicate drink and often prefers to forego the garnish. But when she makes an exception, she chooses unique items. "I love a little sprig of mint or a green apple fan. I find that citrus peels can be too overpowering," she said to Imbibe Magazine in 2019.

Momose's salient methods may be due to lemon peel's propensity to trigger a carbonation release from the cocktail. The latter is avoidable by adding lemon zest instead. To get the best of this ingredient, you can spritz the oils from the orange or lemon peel into the glass, and your cocktail will take on freshness in taste and smell without dropping the actual peel into the drink, per Robb Report
