This Super-Simple 3-Ingredient Cake Uses One Thing You Probably Didn’t Expect - The Kitchn

I love the power of simplicity. Just like how some of the best songs only use three chords, I love when a recipe calls for just three ingredients. No frills, no fuss — just a quick prep and cook time stands between you and that first delicious bite.

Over the past year, I have been adding simple recipes to my collection that really come in handy when I am in a time crunch. It’s for this very reason I was excited to come across this 3-Ingredient Cake from Jocelyn at Grandbaby Cakes. And as it turns out, it’s also gluten-free! 

Inspired by a recipe she learned from Soqueta Experiences in Mallorca, Spain, Jocelyn’s cake can be prepared in just five simple steps. You’ll start by preheating your oven to 350°F, then grab six eggs, separating the yolks from the egg whites. Beat the whites until stiff peaks form and set aside. In a separate bowl, beat the yolks and two cups of sugar until light. Then, add what Jocelyn notes to be the secret ingredient — potato starch — before beating until combined and folding in the egg whites. Bake for about 25 minutes, dust with powdered sugar, and serve!
