We all love indulging in the delicious dishes that are prepared during the holidays, but we don’t necessarily love spending hours in the kitchen preparing them. Wouldn’t that time be better spent sipping a hot cup of cocoa by the fireplace? Freddie Prinze Jr. certainly thinks so and that’s why this year, he’s sticking to side dish recipes with four ingredients or less.
To make this holiday even more special, Prinze Jr teamed up with Libby’s Vegetables to craft three holiday side dish recipes that are delicious, affordable, and help out a great cause. From November 9 to December 31, 2023, each like, comment or share on Freddie’s Instagram post showing his recipes will trigger a donation of one can of Libby’s Vegetables (up to 500,000 coupons) to Meals on Wheels America in support of their mission to improve the health and quality of life of seniors so no one is left hungry or isolated.
“I’ve been familiar with Meals on Wheels America since I was a kid because they used to deliver food to an old lady that lived on my street in Albuquerque, New Mexico back in the day,” Prinze Jr told SheKnows. “They asked if I would come up with these recipes and they said the deal would be that if people liked shared or commented with the hashtag #Libbysgivesthanks on my Instagram page for this, then they’ll give one coupon which is basically one can of Libby’s Vegetables.”
Now, let’s get into those delicious recipes!
Sweet truffle corn
Ingredients:
- Libby’s sweet corn
- salt and pepper to taste.
- 1 tablespoon truffle oil (one tablespoon per can)
- 1 tablespoon butter
How to prepare:
Heat corn over medium heat, add ingredients and cook for five minutes. Cover and cut heat to medium-low for another ten minutes. Serve when ready.
Green beans and bacon
Ingredients:
- Libby’s green beans
- Two slices bacon
- Salt and pepper
How to prepare:
Fry bacon in a pan over medium heat. When crispy remove and chop.
Heat green beans over medium heat in a small pot with the chopped bacon for five minutes. cover and cut the heat to medium-low for another ten. Serve when ready.
Sweet Beets
Ingredients:
- Libby’s beets
- Salt and pepper
- Tablespoon maple syrup
How to prepare:
Heat beets in a sauté pan with the salt and pepper for 10-12 minutes over medium heat. Lightly drizzle the syrup over the beets. Cut heat to low and cook another 2-3 minutes. Serve when ready
